Sausage Frittata

lrg_dsc05654I love using left overs in the fridge to make frittatas for lunch or dinner! You can pretty much use any veggies or meat you want and whip this is up in only a few minutes.

INGREDIENTS

  • 6 eggs
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 1 tomato, diced
  • 4-5 small beef sausages (or any sausages of choice), cut into pieces
  • Sea salt and pepper to taste
  • Avocado oil (or olive oil)

DIRECTIONS

  • Crack 6 eggs in a bowl, season with sea salt and black pepper. Beat with a fork or mixer and set aside.
  • Grease an oven-safe skillet with avocado oil.
  • Cook onion and bell pepper in skillet with avocado oil for a few minutes, until onions caramelize.
  • Add tomatoes and sausages. Cook for about 5 minutes, until sausages are browned.
  • Pour eggs into skillet.
  • Put skillet in the oven and bake at 350F for 15 minutes (NOTE: if you don’t have an oven-safe skillet, pour mixture into an oven safe greased pan and then insert pan in the oven)
  • Serve right away and store the rest in the fridge for later (if you don’t eat it all!). Enjoy!
